Baked Sausage and Potatoes
Serves 4

1 lb. Hot Italian sausage - cut in halves

lb. Potatoes, halved or quartered, depending on the size of the potato (fingerlings are the best but any small white tuber will do)

1 small onion, chopped

2 garlic cloves, sliced very thin

3 Tbsp olive oil

1 Handful Fresh Italian Parsley, chopped

Finishing Salt & Pepper (finishing salt is coarse and, frankly, pricey but it's the best thing to 'finish' the dish)

This is a dish that you will serve over and over again - if the weather ever cools down a bit.

Heat oven to 450. In a Dutch oven or baking dish, mix all but the parsley together. Top with half the parsley and bake for 30 minutes. With a spoon, mix it again then return to oven for 10-15 more minutes - until the potatoes are done. Serve covered with the remaining parsley.
