Figs & Goat Cheese
Serves 4

12 fresh, unpeeled purple figs (refrigerated)
6 oz fresh goat cheese
2 Tbsp. pinenuts
3 Tbsp. extra virgin olive oil
6 oz Arugula (washed and dried)
Salt & pepper

Simple and seasonal when it's hot.

Halve the figs and arrange over a bed of Arugula on a platter. Crumble the goat cheese over the figs. Combine the olive oil with the salt & pepper as a dressing and pour over the figs. Finish with pine nuts. Serve it right away.
