Warm cheese puffs. If you're invited to someone's house for dinner and they'd like you to bring an appetizer, this is a great recipe. Preheat oven to 425 degrees. Combine the salt, butter and water in a medium saucepan. Stirring, bring to a boil over high heat. Remove from heat and add the flour all at once. Beat vigorously with a wooden spoon until the dough is smooth, like mayonnaise. Toss the dough back into the saucepan for about a minute to dry it out a little. Quickly transfer the dough to the bowl of an electric mixer and add all of the eggs and cheese, beating at medium speed until the eggs and cheese are well incorporated. Spoon walnut sized balls of dough onto 2 non-stick baking sheets (Silpats or parchment works, too), spacing them about 1 1/2 inches apart. Some people like to sprinkle a little cheese on top of the dough balls before baking. I'm not one of them. Bake until golden brown, about 20 minutes. Serving Suggestions and Tips: Serve warm. You should get about 30-40 puffs out of this recipe.
