1/4 pound Bresaola, thinly sliced 4-6 cremini mushrooms 1 cup arugula Parmigiano-Reggiano 1 teaspoon red wine vinegar 4 tablespoon extra virgin olive oil |
Bresaola is made from raw beef that has been salted and naturally aged. The meat, which is eaten raw, has a delicate flavor and melts in your mouth. Earthy mushrooms and spicy greens provide the perfect compliment to the meat for this salad. Arrange Bresaola in a layer on serving platter. In a separate bowl, add very thinly sliced mushrooms and arugula. Toss with red wine vinegar and extra virgin olive oil. Sprinkle on top of Bresaola. Shave Parmigiano-Reggiano onto the appetizer. Salt and pepper to taste. |
