| Serves 6 2 cups farro 1 pound fresh fava beans 1 pint cherry tomatoes (orange or yellow look great) 1 cup extra virgin olive oil 1/3 cup white balsamic vinegar Italian parsley, chopped Salt and pepper |
Also know as spelt, farro is a light-brown grain grown in central and northern Italy. Combined with fava beans in this salad, it’s a quintessential Tuscan dish. Boil farro in heavily salted water for about 20 minutes or until al dente. While farro boils, mix the other ingredients in a separate bowl. Drain farro and pour immediately on top of other ingredients in bowl. Mix with spoon. Salt and pepper to taste. |
