Fromage blanc is usually eaten with fruit and sugar as dessert, but can also be used in cooking. Preheat the oven to 400°F In a bowl mix the fromage blanc, creme fraiche, 3 egg yolks, corn starch, split vanilla, salt and the lemon juice. Stir well to make a smooth batter. Beat 4 egg whites in another clean dry bowl until firm peaks form. Fold in the fromage blanc preparation. Pour mixture into an oven-safe skillet at medium heat. Cook until bottom is browned and then bake for about 20 minutes. Serve topped with powder sugar and caramelized apples or fresh red current.
