Here's a simple sandwich that has two of my favorite things: tuna and capers.

| 8 oz tuna in oil, drained 1 Tbsp. capers in vinegar, drained 1 Tbsp. mild black olive, pitted (saracenas are nice or kalamatas if you like more salt) 1 canned anchovy fillet, drained 1 egg yolk 3 Tbsp. extra virgin olive oil Lettuce (iceberg or romaine) 2 or 3 Ciabatta-style rolls (soft, flour dusted and airy squares) |
Here's a simple sandwich that has two of my favorite things: tuna and capers. Put first six ingredients in a food processor until creamy. Toast halved rolls. Brush bread with olive oil. Spread mixture on lettuce-topped bread. Cut the sandwiches in half on the diagonal and eat 'em. |
