Pancetta Wrapped Onion Skewers
Makes 6 skewers

30 small onions Blanched and peeled. (Use flat, small cipoline for this recipe. If you can’t find these, use any sweet, small onion.)
15 slices of pancetta Sliced medium (half the thickness of bacon) and cut in half.
12 fresh bay leaves, cut in half
1/4 cup Extra virgin olive oil

This is a very simple recipe that can work as an antipasto or as a side dish to meat dishes.

This is a 'tweener recipe. It's between summer and fall so how you cook these will depend on the weather. Oil your wooden skewers lightly before assembling them. They'll be easier to eat that way. Also, you can use mushrooms instead of onions if they work better with your meal.

Here's where the weather matters. Try to grill these but if it's raining, use your broiler. Let's assume it's sunny? Preheat the grill (medium heat). Roll the peeled onions in the pancetta. Place on skewers, alternating with bay leaves. Brush with the oil and grill. It should take about 15 minutes. Be sure to turn a few times. Either serve on the skewers or slide them off as a side dish.

Serving Suggestions and Tips: This goes well with red wine (Rioja, Chianti, Cabernet Franc, etc.).
