| Serves 4 1 teaspoon dried herbs salt and pepper to taste 4 teaspoon extra virgin olive oil 4 slices focaccia bread 1/2 pound Epoisses cheese 6 duck prociutto sliced and diced 1 head of frisee 1 teaspoon tarragon vinegar |
This salad is composed of several unique ingredients including, Epoisses cheese, which is made from pure milk exclusively from cows which have calved within the last two or three months. Mix olive oil, herbs, salt and pepper. Gently brush the bread with this seasoning and toast it on a grill or in your oven set to "broil". When golden brown stop cooking and place sliced cheese over the bread. In a thick pan on medium heat add the prociutto with 1 tablespoon of olive oil. When the procuitto starts sizzling turn off the heat, add the frisee and deglaze with the vinegar. Serving Suggestions and Tips: A white Burgundy wine will pair well with this salad.
