| 1/2 lb. European smoked salmon (the cold smoked, lighter kind - exactly like the one we sell! Gerard & Dominique) 1 Tbsp. extra-virgin olive oil 1 Tbsp. capers, drained 3 Tbsp. minced fresh chives 1 Tbsp. minced fresh lemon thyme Juice of 1/2 a lemon Salt and pepper |
I did enjoy a dish like this while in Alaska. I'm not sure what it was called but I'm calling it: Smoked Salmon Tartare. Dice the salmon slices in 1/8" cubes. In a bowl, mix salmon, olive oil, capers, and lemon juice (lemon juice is strong so add this to taste). Add 1/2 of the chives and thyme and season with salt and pepper. Use a ramekin or metal mold to form a shape on each of the 4 dishes. Sprinkle the rest of the thyme and chives over the molded tartare. Serving Suggestions and Tips: Serve it really cold with toasted crostini or mild crackers and the last of your Rose.
