Wilted Peaches with Moscato
Serves 4

2 large, ripe peaches
1 cup crushed amaretti cookies
3 tablespoons good quality cacao powder such as Scharffen Berger
1/2 - 3/4 cup Moscato

Baking peaches brings out all of their sweet juiciness. The Moscato doubles that. An excellent way to end any meal!

Preheat oven to 450 degrees F. Halve the peaches and remove the pit. Set the peach halves in a baking dish, skin side down. In a bowl, combine the crushed amaretti cookies, the cacao powder and a little moscato to bind it all together. Spoon this mixture into the middle of the peaches (in the vacancy the pit left) and pour Moscato over the top. Bake peaches for 15 minutes or until just soft. Enjoy warm!
