Spinach and Gorgonzola Bruschetta
Serves 4

1/2 cup cooked spinach
6 ounces gorgonzola dolce (creamy kind)
1 demi-baguette
2 tablespoons extra virgin olive oil

Creamy gorgonzola melted and mixed with spinach, then served on crispy bread. 4 good ingredients = Delicious!

In a heavy-bottomed pan, melt gorgonzola over low heat and add spinach which has been cleaned, trimmed, boiled in salt water and minced. Blend the mixture well and spread over oiled, toasted, sliced baguette.
