Toasted Mozzarella
2 eggs
1/4 cup bread crumbs (use fresh - they're fresh)
1 Tbsp. fresh thyme
1/2 lb fresh mozzarella, sliced into 1/2" coins
All-purpose flour for dusting
Olive oil, for drizzling
1 Tbsp. chopped parsley
1 Tbsp. capers, rinsed
4 anchovy fillets, drained and chopped
Salt

This one is ripped right out of The Silver Spoon. This is a good one that can be made ahead, frozen, and brought out when guests drop by.

Beat the eggs in a dish and mix bread crumbs, thyme and a pinch of salt in another dish. Dust mozzarella slices with flour, dip in beaten eggs then bread crumb mixture. Chill for at least two hours in refrigerator. Place cookie sheet under broiler and preheat broiler and cookie sheet. Remove mozzarella from refrigerator and place on preheated cookie sheet. Brown under broiler without melting the cheese. Place on serving platter, drizzle with olive oil and sprinkle with parsley, capers and anchovies.
