Anchovy Pasta
1 package spaghetti
1/2 cup anchovies cleaned and chopped fine (see instructions below on how to clean the anchovies)
1/2 cup white onion, finely diced
1/2 cup dry white wine
1/4 cup chicken stock
salt & pepper to taste
garnish of Italian parsley

This is an easy to make, yet delicious pasta. Since it has so few ingredients, it is important to use the best! Try Rustichella d'Abruzzo brand spaghetti, Stella Pinot Grigio white wine and El Velero or Agostino Recca anchovies packed in salt.

In olive oil, saute the onions until they are translucent and then add the white wine and reduce until the alcohol has been cooked out. Add the anchovies and the chicken stock. Cover the pan and simmer on low for 15 minutes or until the anchovies have "melted" into the onions and wine. Add to spaghetti and toss well. Salt and pepper to taste and add Italian parsley as a garnish.

Serving Suggestions and Tips: TO CLEAN ANCHOVIES Soak the anchovies in lukewarm water for 30 minutes. Under running warm water, remove the fin and the skin. Peel back one side of the filet from the spine and then remove the tail and spine from the other half. Rinse well.
