| 1 pound fresh shelled fava beans 4 tablespoon olive oil 3 1/8 inch slices of guanciale (pancetta will substitute) 1 small onion, finely chopped salt and pepper chicken stock or water |
The rich flavor of guanciale, cured jowls of pig, makes this simple dish outstanding. Heat the oil in pan and sauté the guanciale and onion until golden. Add the beans, season with salt and pepper. Moisten with a few tablespoons of stock or water. Increase heat and cook briskly for 20 minutes until beans are tender. Serving Suggestions and Tips: Try to find fava beans from your local farmers market. Look for younger, smaller pods that are firm to the touch. They won't require skinning, as the larger beans might.
