Halibut in Pancetta and Mushroom Sauce
halibut steaks (or 8 halibut cheeks - even better)
1 pat of butter
3 shallots; finely chopped
4 oz pancetta, chopped (bacon works great, too)
4 oz Shitake mushrooms, sliced (any forest mushroom will work)
1/4 cup all purpose flour
5 oz fish stock
5 oz whole milk
1/2 tsp. Herbes de Provence
2 tsp. olive oil
1/2 Tbs. fresh parsley; chopped

Try this recipe served over a bed of Polenta

Melt butter, gently sauté shallots, pancetta and mushrooms for 5 minutes. Add flour, cook for 1 minute. Slowly add stock, then milk, then herbes. Simmer for 4-5 minutes.

Brush fish with oil, grill for 4-5 minutes on each side until cooked through. Rest the fish on a bed of starch (polenta, mashed potatoes, orzo, etc.) then pour on the sauce just before serving. Garnish with parsley.
