Parmigiano Chips
Makes 15-20 chips

10-12 oz freshly grated Parmigiano-Reggiano cheese (no substitutions, please)
Parchment paper

So simple but it makes you look like a genius. With Champagne, they're perfect, dipped in balsamic they're delicious, on soup, they're stunning -- the Parmigiano-Reggiano Chip.

Preheat oven to 350. Cover baking sheet with parchment paper and sprinkle the cheese in mounds. Flatten teh mounds into 2 -inch discs. Cook in oven for about 10 minutes or until lightly golden. Place on wire cooling rack. Serve hot or cold.
