I did enjoy a dish like this while in Alaska. I'm not sure what it was called but I'm calling it: Smoked Salmon Tartare.

Creamy gorgonzola melted and mixed with spinach, then served on crispy bread. 4 good ingredients = Delicious!

This one is ripped right out of The Silver Spoon. This is a good one that can be made ahead, frozen, and brought out when guests drop by.

DeLaurenti chef Garrett Abel, with a literary gun to his head, created this recipe as the ideal platform for the 2009 Ponticelli Olio Novello. The underlying starch and pork really show off the grassy, fresh extra virgin olive oil. This makes for a wonderful first course paired with an indigenous sangiovese such as Rossosole.
